Baby potato fry, spicy, crunchy and flavorful baby potato fry. It is kids favorite side dish for rice. A simple no onion no garlic recipe to serve with hot piping rice.

There is a season for these baby potatoes, we get them rarely. These are used to make dum aloo, a Kashmiri delicacy. But we use them differently, just boil them and saute them with added spices makes a best side dish for rice.
During my childhood days, we used to call them as eggs and felt elated whenever my mom fry them. As we do not about Dum Aloo at that time, so sauteing them is the only option we have.
It is another no onion and no garlic recipe. A very simple and easy recipe to be accompanied with hot piping rice.
Key ingredients in baby potato fry:
- Baby potatoes: Obviously we need baby potatoes or small potatoes. Pressure cook them for 3 to 4 whistles.
- Salt and chilli powder: Salt and chilli powder gives nice taste to the dish.
- Oil: Use generous amount of oil to fry them.
- other condiments: Other condiments like coriander powder and garam masala are purely optional to get nice spicy flavor of the dish.
Steps involved:
- pressure cook the baby potatoes for 3 to 4 whistles.
- Drain excess water and remove the skin.
- Heat oil in a kadai till the fumes are out, fry portions of baby potatoes.
- Do not add all of them at once, fry them little by little.
- So that we can less oil to fry them.
- Serve crunchy, spicy baby potato fry with hot piping rice and ghee.

Baby Potato Fry | How to make Baby Potato Fry
Ingredients
- 200 Grams Baby Potatoes
- Salt to Taste
- 2 Tablespoon Oil
- 1 Tablespoon Red Chili Powder
- 1/2 Teaspoon Coriander Powder
- 1/2 Garam Masala Powder
Instructions
- Wash baby potatoes thoroughly and pressure cook them for 2 to 3 whistles.
- Once the cooker cools completely, transfer them onto a colander vessel.
- Drain excess water and wash under running water.
- This will cool them completely would be easy to remove the skin.
- Remove the skin and Keep them aside.
- Heat oil in a kadai till the fumes comes out. Simmer the flame.
- Add some portion of baby potatoes, leave them like that for a minute.
- Then slowly fry them using stainless steel spatula.
- Fry them till the outer part of them become crispy.
- Transfer them to a bowl and keep aside.
- Repeat the same with rest of potatoes.
- Once all of them fried, transfer all of them into the kadai and fry.
- While frying add salt, red chili powder, coriander powder and garam masala.
- Saute them well so that all the masalas combines well with potatoes.
- Serve baby potato fry with hot piping rice.
