Soya Biryani

Soya biryani made with soft, juicy soya chunks and long grain basmati rice.

It is a nutrient-dense, protein-packed vegetarian masterpiece that brings all the rich aromas and flavors of traditional royal biryanis.

This dish serves as a deeply satisfying alternative to traditional meat-based biryanis without compromising on taste and texture.

It is best for pure vegetarians who do not even eat egg.

Here in the given recipe I did not add any vegetables but if we add all the vegetables that would make the dish more flavorful and tastier.

The hallmark of a unforgettable soya biryani lies in the careful preparation and layering of its components. But we without layer also it tastes good. To get the feeling of biryani layering is important.

It is best for kids lunch box too. Soya chunks act like tiny sponges. When soaked and cooked, they absorb all the rich gravy and spice flavors, giving them a tender, meat-like texture. It is a fantastic option if you want a high-protein vegetarian dish for kids that doesn’t compromise on taste.

When unsealed, the dish releases an irresistible aroma that instantly fills the room.

Serve this golden, aromatic soya biryani piping hot alongside a side of chilled cucumber-mint raita, mirchi ka salan, roasted papad, and fresh onion rings.

Soya Biryani is best for simple weekend family dinners, or casual meal preps, a guilt-free, high-protein feast that appeals one and all alike.

Key ingredients in Soya biryani:

  • Soya Chunks: Always prefer to use medium or big one. Soak them for at least 10 to 15 minutes to get best out of it.
  • Rice: For any flavored rice long- grained basmati rice makes taste and texture appropriate, but we can use normal regular rice also. Soaking the rice is also important to get the proper texture.
  • Vegetables: Adding vegetables likes carrot, beans and peas is purely optional. Adding all the vegetables make the rice more palatable and protein rich.
  • Condiments: Salt, chilli powder, garam masala, coriander powder and ginger garlic paste are the spices to be used.
  • Whole Masala: Use whole masalas like clove, cardamom, cinnamon, Tej patta, shahi jeera, star anise and mace.

Steps included:

  1. Marinating the Soya Chunks: First, soak soya chunks in boiling water. Squeeze dry and mix with thick yogurt, ginger-garlic paste, basic spices like turmeric, chili powder, and garam masala. This makes the soya tender and flavorful inside.
  2. Cooking the Rice: Cook the long-grain Basmati rice with whole spices like cloves, cardamom, and cinnamon until it is mostly done, leaving it light and fluffy.
  3. Layering (Dum Cooking): In a heavy pot, the spiced soya gravy is placed at the bottom and covered with a layer of the cooked rice. It is topped with golden fried onions (birista), fresh mint, a splash of saffron milk, and a drizzle of ghee.
  4. Steaming: The pot is covered tightly and left to steam on low heat. This slow-cooking process locks in all the moisture and lets the rich flavors blend together.

But, without the above mentioned steps, we can make soya biryani in one pot too. For this recipe I made it in one pot only. Without any layering just cook the rice along with the vegetables and left for slow cooking on hot tawa for 5 to 10 minutes.
