The curry is served mainly in most of the weddings in Andhra side. In some parts of Andhra Gongura is combined with red meat or chicken. It is served with puri or roti and sometimes with rice too.
I have a friend, who always boosts about the combination of gongura and non-veg. with gongura. When I came know that soya chunks is meat for vegetarians, I thought of combining it with gongura.
Meanwhile I searched in internet, I found the recipe. Immediately I tried and the result is the recipe.

Gongura: Gongura or Sorreal Leaves are available mostly in Telugu states of India. They are tangy and iron-rich leafy vegetable.
Soya Chunks: Soya chunks or meal maker are plant based protein food for vegetarians. Soak them in boiling water.
Condiments: Use condiments like chilli powder, coriander powder and garam masala to balance the sour taste of gongura and get the right spicy flavour to the curry.
Onions & Tomatoes: Onions and tomatoes make the curry tasty and voluminous.
Steps included:
- Soak soya chunks in boiling water to make them soft and cook faster.
- Chop onion and tomato.
- Wash and dry gongura leaves. Roast them in hot oil, along with green chillis, ginger and garlic.
- Adding garlic and ginger is optional, anyhow we will add ginger garlic paste in the curry.
- To avoid pungent smell of it skip adding them while sauteeing gongura.
- Make smooth paste out of it.

Ingredients
- 2 cups gongura leaves
- 1 cup soya chunks
- 1 onion finely chopped
- 1 tomato finely chopped
- Salt to taste
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/4 tsp coriander powder
- 1/4 tsp garam masala
- 3 to 5 tbsp oil
- 4 green chillis
Instructions
- soak soya chunks in boiling water for half an hour.
- Discard Gongura leaves from the stem and wash thoroughly.
- heat oil in a pan, add 2 green chillis and gongura leaves.
- Saute them till they turn mushy.
- Cool and grind it to make paste.
- heat oil in a kadai, add cumin seeds, mustard seeds and red chillis.
- Fry them till crackle, add chopped onion.
- saute them till they are translucent.
- Add ginger garlic paste and combine them well.
- add tomatoes and fry again.
- add turmeric powder, salt and red chilli powder.
- Add little water and let them cook well.
- drain excess water from soaked soya and squeeze and add them to the curry.
- Add the gongura paste too.
- mix it well and let it cook for a while.
- lastly add garam masala powder and serve.
