Curd rice Curd rice, also known as thayir sadam in Tamil and daddojanam in Telugu, is a popular comfort food from South India.

It is made by mixing soft, cooked rice with fresh, creamy curd. Though simple, it is an important part of South Indian meals.
Plain curd rice is often served at the end of lunch or dinner to help cool the body and support digestion, but tempering makes the dish altogether special.
The rice is cooked until very soft and lightly mashed to create a smooth, creamy texture. Once it has cooled, fresh yogurt is added with salt and seasoning. Some people add little milk to keep it soft and prevent it from becoming too sour.
The highlight of the dish is its flavorful tadka. Mustard seeds, urad dal and chana dal are fried in a little oil or ghee. Curry leaves, green chilies, and grated ginger are then added, creating a delicious aroma. Adding hing gives nice taste to the dish. This hot tempering is poured over it, adding a wonderful crunch and flavor.
In some restaurants we can find the dish served with garnished ingredients such as:
- Pomegranate seeds
- Grated carrots
- Roasted cashews
- Chopped coriander leaves
These additions make the dish more colorful, nutritious, and flavorful. Of course again it is a personal choice of every household.
I do not like to add anything of such ingredients. But I would love to serve lemon pickle or fried sun-dried chillis.
Besides being delicious, curd rice offers many health benefits. The yogurt contains probiotics that help maintain a healthy digestive system. It also helps cool the body during hot weather and is easy to digest, making it a great choice when recovering from illness.

The important ingredient of this dish is curd. Curd or yogurt can be made at home or use store bought one. Normally I make curd at home.
Making of curd is an easy task, but it depends on the place where we live in. If you stay in a chill and cold climate place, then it will be tough.
Due the weather conditions forming of thick curd would be difficult. So better get it from stores. Serve the chilled curd rice during the summer to beat the heat.
Key Ingredients in curd rice:
- Rice: Cook the rice with 1:2&1/4 ratio of rice and water.
- Curd/Yogurt: USe home-made or store bought curd but make sure that it is not sour in taste.
- Tadka: Make tadka with ghee to get nice rich taste.
Step by step procedure:
- Pressure cook one portion rice with 2 and 1/4 portions of water for 4 to 5 whistles.
- Mash the cooked rice to make it mushy and creamy.
- Temper it with ghee flavored tadka and finely chopped ginger and green chillis.
- Add this tadka to the above cooked and mashed rice.
- Combine curd, and salt. Mix it well.
- Serve it with curd chilli or lemon pickle.

Curd Rice | Curd Rice Recipe Andhra Style
Ingredients
- 1 Cup Rice
- 1 Ltr Curd/Yogurt
- 2 Tbsp Ghee
- 1 Tbsp Mustard Seeds
- 1 Tbsp Cumin Seeds
- 1 Tbsp Bengal Gram/Chana Dal
- 1 Tbsp Black Gram/Urad Dal
- 1/4 Tsp Asafoetida/Hing
- 1/2 Tbsp Black Pepper Seeds Optional
- 5 Green chillies Finely Chopped
- 4 ” Long Ginger Finely Chopped
- 10 to 15 Curry Leaves
- Fistful of Coriander Leaves
- Salt to Taste
Instructions
- Finely chop ginger and green chilles. and keep them aside.
- Pressure cook one portion rice with 2 and 1/4 portions of water for 4 to 5 whistles.
- Once the pressure goes off take the rice out and mash it with a ladle.
- Let the cooked rice be soft and mushy.
- Heat a pan, add ghee, mustard seeds, cumin seeds, bengal gram and black gram.
- Allow them fry, then add hing/asafoetida.
- Saute them well or till they turn golden brown.
- Add green chillies and ginger, saute them.
- Add curry leaves and coriander leaves also. Fry them well.
- Add this tadka to the above cooked and mashed rice.
- Combine it well, add salt and again mix it well.
- Beat the curd and keep it readily available.
- Add chilled curd to the rice and mix it well.
- Serve it with curd chilli or lemon pickle.
