These are that feel like comfort food the moment you smell them frying. This is a beloved Telugu-style fritter made from fresh corn kernels, ground with everyday spices and lentils. They were then shaped into small patties and deep-fried until the outside turns golden and crunchy while the inside stays soft.

Crispy Mokkajonna Garelu | Corn Vadas
Ingredients
- 4 Corn Kernels
- 1 cup Fresh Coriander Leaves
- 1/2 cup Curry Leaves
- Salt to Taste
- 1 tsp Red Chilli Powder
- 1 tbsp Til/Sesame Seeds
- 1 Onion finely chopped
- Oil for deep frying
Instructions
- Deseed the dorn from the kernels.
- These are desi corn not the sweet corn.
- We may try with sweet corn also but they taste a bit sweet.
- Wash them well.
- In a blender jar add the corn and blend it to a coarse paste.
- Do not add water.
- Transfer this paste into a mixing bowl.
- Add chopped coriander leaves, curry leaves.
- Add salt, red chilli powder and a spoonful of sesame seeds.
- Add chopped onions, it is purely optional.
- Mix all of them well and check the consistency of the dough.
- If you found a bit sticky and unable to make patties, we can add little rice flour.
- Spread a clean cloth on the kitchen top.
- Make small patties with the dough on the cloth.
- This would absorb the moisture present in the dough and also absorbs less oil.
- Heat oil on a high flame till the fumes appear.
- Reduce the flame and slowly drop each mokkajonna garelu into the oil.
- Fry them till they turn crispy outside and cooked well inside.
- Transfer them onto a kitchen tissue.
- Repeat the same with all the garelu.
- Serve hot crispy mokkajonna garely with any chutney of your choice or sauce.
