Recipe Card

Ingredients:

  • 1 Cup Besan/Gram Flour
  • 1/2 Cup Curd
  • 1 onion
  • 1 Tomato
  • 2 or 3 Green chillis
  • 2″ long Ginger
  • 1/2 tsp Ajwain/CaromSeeds
  • Salt to Taste
  • 1 tsp Coriander Leaves
  • 3 to 4  Curry Leaves
  • 1/2 tsp Cumin Seeds
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chilli Powder

Procedure:

  • Chop onion, tomato, ginger and green chillis.
  • In a mix bowl add besan, salt, turmeric powder and curd.
  • Mix them well. Add red chilli powder, ajwain and cumin seeds.
  • Give a nice stir to avoid lumps.
  • Add water little by little to make the batter.
  • The consistency of the batter should be like that of dosa batter.
  • It should not be too thin or too thick. Just pouring.
  • Add all other ingredients like, chopped onions, tomatoes, green chillis and ginger.
  • Let the batter rest for 10 to 15 minutes.
  • Give a nice mix and make chillas after 15 minutes.
  • Heat dosa tawa, pour a ladle full of besan chilla batter.
  • Gently pat the batter to spread on the tawa.
  • Do not over spread, this would make the chilla break.
  • The besan chilla should be 1 or 2mm thickness only.
  • Sprinkle little oil on the chilla.
  • Cook for 2 minutes on low flame only.
  • Once cooked on one side flip it and cook for another 2 minutes.
  • Cook for another minutes and serve.
  • Serve besan chilla with mint chutney or onion chutney.
