It is offered to the deity during Satyanaraya Swami Vratam or Satyanarayana Katha puja in most of South Indian homes. Though it is made with a little changes and adding color is not allowed.

When I was a kid, it is served in marriages. I used to love it and asked my mom to make as it is served. She is so lovely always make it for me specially. I used to love that color and the shape mainly that diamond cut. I called it ‘Diamond Sweet’. Whenever I wish to have sweet I prefer make only two sweets one is this and the other one is Semiya payasam or kheer. Though I have a sweet tooth, I used to get only these two sweets. ๐Ÿ™‚

Simply fry suji or semolina and add sugar and water. If making it for offering we need to add milk too. Adding food colour is also optional. I like that color I add it, but as advised not to use food colour too much we can skip it. Rava kesari recipe is very easy and simple recipe to make. Even this can be made by beginners without fail. We need not have any prior planning to make it.

Key Ingredients in Rava Kesari:

  • Suji/Semolina: Use fine rava which we use to make Upma.
  • Sugar: Sugar is the sweetener. Equal proportions of sugar and suji to get proper taste.
  • Water: Use only water, do not use milk. This would change the texture, retaining shape would also difficult.
  • Ghee: Ghee is the most important ingredient in the dish. Use flexible.
  • Orange Food Colour: Use only a pinch of it, you can avoid it too if you don’t like.
  • Cardamom Powder: To enhance the sweet flavour add a teaspoonful of it.

Ingredients
  

  • 1 Cup Suji/Semolina
  • 1 cup Sugar
  • 3 Cups Water
  • 1/4 Cup Ghee
  • Pinch Orange Food Colour optional
  • 1 tsp Cardamom Powder

Instructions
 

  • Apply ghee to a plate with edges.
  • Heat 1/4 cup of ghee in a kadai, add suji and fry till the raw smell goes off.
  • Add water and allow it to just boil.
  • Now add sugar and mix well. Let it boil for a while.
  • Food color can be add directly or it can be mixed with water and added to suji.
  • Add food colour to it. Adding color is optional, if don’t want to add we can skip it.
  • Once the color mixed with the rava, add cardamom powder. Mix it again.
  • Allow it to cook, while keep stirring it occasionally.
  • Cook it till the rava kesari does not stick to the kadai. and also separates ghee.
  • Once it started leaving the pan switch off the flame.
  • This would take 10 to 12 minutes. Cook on low flame only.
  • Once kesari reached the mentioned consistency, Pour this on to the greased plate and spread.
  • Cut it into desired shapes, normally it is in diamond shape only.
  • Serve rava kesari during any time of the day.
