Potato Rice recipe is a flavored rice dish made with potatoes, cooked rice, simple spices and herbs. A perfect one pot dish for lunch box and a quick meal for busy days.

Busy working ladies always prefer to make simple and quick recipes. Potato rice one among that, simply known as aloo rice. Serve potato rice with plain curd.
Potato is an all time favourite vegetable to almost all the kids. Pack potato rice for kids lunch box, which make them happy. They will be on cloud nine on that day for their lunch box. A very easy and simple rice recipe loved by one and all.
Pressure cook potatoes and rice separately and combine them with whole spices. This would make rice flavourful. Sometimes adding extra flavours to the simple curry makes the rice a special dish like potato rice.
Serve it with plain curd or any other simple raita. We can use any type of rice to make it, basmati rice, or regular sona masoori.
I always prefer to use normal regular rice, sona masoori as it is always available at home and we need to soak for longer time to cook. There is no specific recipe to make potato rice, as it is easily customizable to our taste and preference.
My kids like a bit spicy so I would prefer to add more spices. Those who don’t like it spicy can adjust the spices according to their need.

Potato Rice Recipe | Lunch box recipe
Ingredients
- 1 Cup Rice
- 200 grms Potatoes / Aloo
- 1 Medium size Onion
- Salt to Taste
- 1/4 tsp Turmeric Powder
- 1 tbsp Red Chilli powder
- 1 tbsp Ginger Garlic Paste
- 1 tsp Garam Masala
- 1 tsp Coriander Powder
- 1 tbsp Lemon Juice
Instructions
- Pressure cook rice with 2 cups of water, for 1 cup rice add 2 cups water, with 3 whistles.
- Allow the rice to cool down once the cooker gets cool.
- Cut potatoes into byte size pieces and pressure cook them also for 1 or 2 whistles.
- Heat oil in a kadai, fry cooked potatoes till they are crisp.
- Fry them in batches so that they would fry crisp and won’t turn mushy.
- Keep them aside.
- Again heat oil in a kadai, add sliced onions and fry them till they turn translucent.
- Add ginger garlic paste and fry again.
- Add salt and turmeric powder. Combine them well with the onions.
- Add chilli powder, coriander powder and garam masala. Fry them well till the oil separates.
- Add fried potatoes and rice. Combine them well and Switch off the flame.
- Just before transferring into the serving bowl sprinkle lemon juice and mix it well.
- Serve potato rice with plain curd.
