Potato Rice Recipe | Lunch box recipe

Potato Rice recipe is a flavored rice dish made with potatoes, cooked rice, simple spices and herbs. A perfect one pot dish for lunch box and a quick meal for busy days.

Ingredients
  

  • 1 Cup Rice
  • 200 grms Potatoes / Aloo
  • 1 Medium size Onion
  • Salt to Taste
  • 1/4 tsp Turmeric Powder
  • 1 tbsp Red Chilli powder
  • 1 tbsp Ginger Garlic Paste
  • 1 tsp Garam Masala
  • 1 tsp Coriander Powder
  • 1 tbsp Lemon Juice

Instructions
 

  • Pressure cook rice with 2 cups of water, for 1 cup rice add 2 cups water, with 3 whistles.
  • Allow the rice to cool down once the cooker gets cool.
  • Cut potatoes into byte size pieces and pressure cook them also for 1 or 2 whistles.
  • Heat oil in a kadai, fry cooked potatoes till they are crisp.
  • Fry them in batches so that they would fry crisp and won't turn mushy.
  • Keep them aside.
  • Again heat oil in a kadai, add sliced onions and fry them till they turn translucent.
  • Add ginger garlic paste and fry again.
  • Add salt and turmeric powder. Combine them well with the onions.
  • Add chilli powder, coriander powder and garam masala. Fry them well till the oil separates.
  • Add fried potatoes and rice. Combine them well and Switch off the flame.
  • Just before transferring into the serving bowl sprinkle lemon juice and mix it well.
  • Serve potato rice with plain curd.

Notes

Boil potatoes before hand to  make the dish fast.
Fry them in batches to get crispy outer layer.
Cook the rice too well in advance to make it faster.
