Mix Veg Sagu Recipe. Or simply Sagu is a side dish for roti or chapati made with mix of vegetables. It is a South Indian cuisine in particular belongs to Karnataka.

About Mix Veg Sagu:

Mix veg sagu as the name reflects made with mix of vegetables like carrots, potato, peas, and onion. But the actual sagu is made mainly with potatoes and green peas. Though sagu can be prepared in different ways, using only one vegetable like potatoes or bottle gourd alone. The vegetables are cooked and simmered in a grounded masala. Sagu is a simple and easy recipe, which can be prepared in less than 20 minutes. Mixed veg sagu is a mildly spiced side dish for roti or chapati. During the rainy days or winter nights we can enjoy hot sagu with roti or chapati.

I have learned this recipe from my MIL. She used to avoid garlic and onion on Saturdays. So she used to prepare simple and easy with one vegetable mainly bottle gourd. But when I started cooking I keep trying it in different ways by adding other vegetables or sometimes only with potatoes. Sometimes adding onions too, sometimes avoiding them too like my MIL, so on and so forth. Only after I started blogging, I learned that is a Karnataka dish, before that I used to think that it is my MIL’s inventions. 🙂 Whatever it may be, mix veg sagu is a very interesting and moxt liking recipe. Serve mix veg sagu recipe with roti, chapati or poori.

Key Ingredients:

Mixed Vegetables: We can use any vegetables of our choice like carrots, potatoes, beans and green peas.

Sagu Masala: Pound fresh coconut, green chillis, ginger, garlic, coriander seeds, cumin seeds, cloves, cardamom, cinnamon and fresh coriander leaves to make smooth paste. While grinding do not add too much. We can use coconut powder too, though fresh coconut is always preferred.

Condiments: Salt and turmeric powder are only included.

Tadka: Ghee tadka would taste better than oil.

Ingredients
  

  • 1/2 cup Carrots
  • 1/2 cup French Beans
  • 1/2 Cup Potatoes
  • 1/4 cup Green Peas
  • 1/4 cup Onion
  • Salt to Taste
  • 1 tsp Turmeric Powder
  • 1/2 Cup Coconut
  • 2 inches ” Long Ginger
  • 2 or 3 Green Chillis
  • 3 to 4 Garlic
  • 1/2 tbsp Coriander Seeds
  • 1/4 tsp Cumin Seeds
  • 1 or 2 or 2 Cardamom
  • 2 or 3 or 3 Cloves
  • 1 inch Long Cinnamon Stick
  • 1/2 Tbsp Fried Gram/Putnala Pappu
  • 1 tbsp ghee
  • 1/2 tbsp Oil
  • 1/4 tsp Mustard Seeds
  • 1/4 tsp Cumin Seeds
  • Fistful of Coriander leaves

Instructions
 

  • Wash and peel the skin of carrot and potatoes.
  • Finely chop all the vegetables.
  • In a pressure cooker add potatos, carrtos, green peas and french beans.
  • Add little salt and turmeric powder. Add water till the vegetables immerse into it.
  • Pressure cook them for 2 or 3 whistles. I would advice to cook for only 2 whistles.
  • Once the pressure cools down, drain the excess water and keep the vegetables aside.
  • In a blender jar add coconut, green chillis, ginger, garlic and coriander seeds.
  • Add also cumin seeds, cloves, cardamom and cinnamon stick.
  • And lastly add coriander leaves also.
  • Grind all of them together to make a smooth paste. While grinding add little water.
  • Heat ghee and oil in a kadai.
  • Add mustard seeds and cumin seeds. Allow them to splutter.
  • Add onions and sate them till they are translucent.
  • Add salt and turmeric powder. Add cooked vegetables, mix them well.
  • Add the above pounded masala into the vegetables.
  • Mix them well and allow mix veg sagu to cook for another 2 to 3 minutes.
  • If you feel the curry is too thick add a cup of water and allow it to cook.
  • Switch off the flame and transfer the mix veg sagu to serving bowl.
  • Serve mix veg sagu recipe with roti or chapati.

Notes

Do not over cook the vegetables. Cook for 2 whistles so that they won’t loose their shape.
While grinding the masala do not add too much water, it would become thin and watery. 
This won’t taste nice. Thickening of mix veg sagu would take longer time looses its texture.
