Wash and peel the skin of carrot and potatoes.
Finely chop all the vegetables.
In a pressure cooker add potatos, carrtos, green peas and french beans.
Add little salt and turmeric powder. Add water till the vegetables immerse into it.
Pressure cook them for 2 or 3 whistles. I would advice to cook for only 2 whistles.
Once the pressure cools down, drain the excess water and keep the vegetables aside.
In a blender jar add coconut, green chillis, ginger, garlic and coriander seeds.
Add also cumin seeds, cloves, cardamom and cinnamon stick.
And lastly add coriander leaves also.
Grind all of them together to make a smooth paste. While grinding add little water.
Heat ghee and oil in a kadai.
Add mustard seeds and cumin seeds. Allow them to splutter.
Add onions and sate them till they are translucent.
Add salt and turmeric powder. Add cooked vegetables, mix them well.
Add the above pounded masala into the vegetables.
Mix them well and allow mix veg sagu to cook for another 2 to 3 minutes.
If you feel the curry is too thick add a cup of water and allow it to cook.
Switch off the flame and transfer the mix veg sagu to serving bowl.
Serve mix veg sagu recipe with roti or chapati.
