Kanda Vadalu | Elephant Foot Yam Fritters

Kanda Garelu or Kanda Vadalu aka Suran Vadas are kebab type fritters made with kanda or suran. They are very easy to make and they help in substituting curry.

Kanda Garelu

We can use kanda or suran for making curry. Whenever the available vegetable is not sufficient then the best way is to make kanda vadalu.

As they are like kebabs and deep fried dish, kanda vadalu can be served as tea time snack also.

We can follow different ways to make them, one way is soak and grind kanda along with dals, chana and urad. Another way of making kanda vadalu is simply grind and add rice flour and besan and other condiments and make vada. Either way they taste yummy and tasty.

Here in the mentioned recipe I have included onions but if you don’t want to you always skip them too.

I did not grind kanda instead I grated it and made vada to get the crunchy vegetable taste too.

Kanda vegetable can be made different varieties of curry like boil and fry them, or make upma curry like that of potato bhaji. And we also use kanda in avial, a Kerala dish made during Onam.

Key ingredients in Kanda Garelu:

Kanda: Kanda or suran is a vegetable, grate or grind.

Onion/chillis/ginger: Chop all of them and add them to kanda.

Rice Flour and Besan: Add rice flour and besan to get crunchy taste. We can soak chana dal and urad dal and grind them and add them too.

Adding flours make them instantly, soaking dals means we have to prepare before hand.

Ingredients
  

  • 2 cups Kanda/Suran
  • 1 Cup Rice Flour
  • 2 tbsp Besan
  • Salt to Taste
  • 1 tsp Red Chilli Powder
  • 1 Green chilli finely chopped
  • 2 " Long Ginger finely chopped
  • 3 to 5 Curry Leaves
  • 1 Onion finely chopped
  • Fistful of Coriander Leaves
  • Oil for Frying

Instructions
 

  • Chop onion, ginger and green chillis.
  • Peel the skin and grate kanda or suran.
  • In a mixing bowl add all other ingredients except oil.
  • Mix all of them well and add little water to make soft dough.
  • Heat enough oil to deep fry in a kadai.
  • Make small patties and drop slowly in the hot oil.
  • Fry kanda garelu in low to medium flame.
  • Do not over crowd the oil, just add as many as can be fried.
  • Once the garelu turn into golden yellow color transfer them to kitchen tissue.
  • Serve kanda garelu with rice or as evening tea time snack.

Notes

Grate kanda or we can grind it too.
But while grinding do not add water.
