Kanda Vadalu | Elephant Foot Yam Fritters
Kanda Garelu
or Kanda Vadalu
aka Suran Vadas are kebab type fritters made with kanda or suran. They are very easy to make and they help in substituting curry.

Kanda/Suran

Rice Flour

Besan
Salt to Taste

Red Chilli Powder

Green chilli
finely chopped
2 " Long
Ginger
finely chopped

Curry Leaves

Onion
finely chopped
Fistful of Coriander Leaves
Oil for Frying
Instructions
Chop onion, ginger and green chillis.
Peel the skin and grate kanda or suran.
In a mixing bowl add all other ingredients except oil.
Mix all of them well and add little water to make soft dough.
Heat enough oil to deep fry in a kadai.
Make small patties and drop slowly in the hot oil.
Fry kanda garelu in low to medium flame.
Do not over crowd the oil, just add as many as can be fried.
Once the garelu turn into golden yellow color transfer them to kitchen tissue.
Serve kanda garelu with rice or as evening tea time snack.
Notes
Grate kanda or we can grind it too.
But while grinding do not add water.
