Eggless vanilla muffins, fluffy and delicious muffins flavored with vanilla and chocolate chips. They are the best combo with tea or coffee. These are the best pass time snacks item for kids too.

Eggless vanilla muffins are basic and classic muffins. These homemade muffins are fluffy, soft and moist. the goodness of chocolate chips gives extra flavor to it. these muffins are meant for people like me who want to avoid eggs directly or indirectly. These muffins needs very simple ingredients like maida, oil, curd, sugar and oil. The vanilla essence added in it gives the perfect flavor to it.
This time I made very simple but we can sprinkle some powdered sugar on top of it to get nice texture. Or else we can add tutti fruity and nuts along with chocolate chips. Eggless vanilla muffins are the best and simple recipe for anyone to start their baking journey.
I started baking only after I get my LG MC-7880PSR Convection model oven. It has got 27 autocook methods. Here in the recipe, I am giving the temperatures and time I set in my oven. But you have to change accordingly. All ovens are not the same. We should keep ourselves hang around to learn it completely. Each and every oven varies in temperature and functionality.
Whenever I bake anything I prefer to make eggless baking only. My daughter is very fond of chocolate and the taste. She even like to have idli or dosa in chocolate flavour. So whenever I want to bake basic eggless muffins recipe, she always wanted me to bake chocolate muffins recipe. But this time I choose to bake simple and basic muffins so I baked vanilla muffins.
About the Ingredients:
All Purpose Flour/Maida: It’s very normal of using maida or all purpose flour for baking, but nowadays people are conscious about health so started using wheat flour too. But I always like to use all purpose flour only.
Curd or Yogurt: To replace egg we curd and oil. We can use store bought or homemade curd. Even plain yogurt also serves the same purpose.
Sugar: We can use castor sugar or normal regular sugar to get the sweetness.
Oil: Use any cooking oil which doesn’t have pungent fragrance and specific taste.
Baking Soda and Baking Powder: These are the two agents which helps in rising and fluffiness to the dish. Use them wisely, over using of them makes the muffins crumble.
Chocolate Chips/Nuts/tutti fruity: We can include any of them to get more taste. I have add only chocolate chips, but if you have any of them like nuts, tutti fruity can be added to muffins.
Vanilla Essence: The essence is another ingredient which gives the aroma of the bakery baked muffins.


Eggless Vanilla Muffins : Fluffy and delicious treat
Ingredients
- 3/4 Cup Maida/All Purpose Flour
- 1/2 Cup Curd/ Yogurt
- 1/4 Cup Cooking Oil
- 6 tbsp Sugar
- 1 tsp Vanilla Essesnce
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
Instructions
- Preheat the oven for 10 minutes at 180 degrees Celsius.
- Line up the muffins molds with paper cups and grease them.
- In a mixing bowl, add curd and baking soda.
- Mix it well and let the curd becomes fluffy. Keep it aside.
- In another bowl, mix sugar and oil.
- Mix it well till the sugar starts melting.
- Add the above mixed curd into the sugar.
- Mix it well. Add vanilla essence and mix it again.
- Mix dry ingredients like maida and baking powder in a bowl.
- Sieve these dry ingredients into the wet ones.
- Lightly mix them till there is no lumps left using a spatula.
- Fill the lined up muffin molds with 2/3 to 3/4 of the cup with the batter.
- Bake them for 20 to 25 minutes.
- Check with piercing a toothpick, if it comes out clean eggless vanilla muffins are done.
- Cool them on the wire rack.
- Serve eggless vanilla muffins with milk or anytime during the day.
