Eggless Vanilla Muffins : Fluffy and delicious treat

Eggless vanilla muffins, fluffy and delicious muffins flavored with vanilla and chocolate chips. They are the best combo with tea or coffee. These are the best pass time snacks item for kids too.

Ingredients
  

  • 3/4 Cup Maida/All Purpose Flour
  • 1/2 Cup Curd/ Yogurt
  • 1/4 Cup Cooking Oil
  • 6 tbsp Sugar
  • 1 tsp Vanilla Essesnce
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda

Instructions
 

  • Preheat the oven for 10 minutes at 180 degrees Celsius.
  • Line up the muffins molds with paper cups and grease them.
  • In a mixing bowl, add curd and baking soda.
  • Mix it well and let the curd becomes fluffy. Keep it aside.
  • In another bowl, mix sugar and oil.
  • Mix it well till the sugar starts melting.
  • Add the above mixed curd into the sugar.
  • Mix it well. Add vanilla essence and mix it again.
  • Mix dry ingredients like maida and baking powder in a bowl.
  • Sieve these dry ingredients into the wet ones.
  • Lightly mix them till there is no lumps left using a spatula.
  • Fill the lined up muffin molds with 2/3 to 3/4 of the cup with the batter.
  • Bake them for 20 to 25 minutes.
  • Check with piercing a toothpick, if it comes out clean eggless vanilla muffins are done.
  • Cool them on the wire rack.
  • Serve eggless vanilla muffins with milk or anytime during the day.

Notes

Do not over mix the batter, this would make the muffins stiff.
Add baking powder and soda as mentioned in the recipe only, otherwise the muffins turns crumble.
Bake the muffins for 15 minutes then check them once. As it depends on the oven sometimes they bake very fast.
Baking varies from oven to oven, so before baking please read the manual given with the oven and follow the instructions.
