Preheat the oven for 10 minutes at 180 degrees Celsius.
Line up the muffins molds with paper cups and grease them.
In a mixing bowl, add curd and baking soda.
Mix it well and let the curd becomes fluffy. Keep it aside.
In another bowl, mix sugar and oil.
Mix it well till the sugar starts melting.
Add the above mixed curd into the sugar.
Mix it well. Add vanilla essence and mix it again.
Mix dry ingredients like maida and baking powder in a bowl.
Sieve these dry ingredients into the wet ones.
Lightly mix them till there is no lumps left using a spatula.
Fill the lined up muffin molds with 2/3 to 3/4 of the cup with the batter.
Bake them for 20 to 25 minutes.
Check with piercing a toothpick, if it comes out clean eggless vanilla muffins are done.
Cool them on the wire rack.
Serve eggless vanilla muffins with milk or anytime during the day.
