Anapakaya Kudumulu or Telangana Kudumulu is a special dish to Telangana state in India. Thanks to my friend Geetha who introduced me to this dish. Anapakaya Kudumulu are very easy to make and tasty too. They are made with rice flour, spring onion and Hyacinth beans or anapa ginjalu. If hyacinth beans are not available we can use green peas.

These kudumulu are not regular kudumulu or undrallu made during Ganesh chathurthi. Telangana Kudumulu are not sweet, they are spicy. Anapa ginjalu or hyacinth beans are mainly available during winter season only.
If using them first we have to cook or boil them till soft, then make kudumulu. But if they are not available we can use green peas, we can add them directly to the dough.
The most interesting part of them is we use very less or no oil at all. So they are good for health too.
Key Ingredients in Anapakaya Kudumulu:
Rice Flour: No specific measurement is required. Use as much rice flour as we want to make.
Ginger Garlic Paste: We can use chilli and ginger garlic paste or separately also.
Green Chillis Paste: Use chili paste to get spicy taste.
Spring Onion: Use fresh spring onion, both greens and onion bulbs too.
Oil: Takes very less oil, as less as 1 or 2 tablespoon only.
Try the recipe and enjoy healthy and tasty Telangana cuisine.
