Ginger: Use best and fresh ginger. Wash and keep in water it before using. The mud covering it would keep it fresh. It should be washed away. Freshly grated or minced gives a longevity to the dish.

Garlic: It also should be fresh and tender. We can keep the skin or else remove it. We need not wash, but if you wash them do not keep in water for longer time.

Salt: Add very little salt, it acts as preservatory to the dish.

Oil: Adding oil is optional. We can avoid it. It would keep the dish fresh for longer time.

Ingredients
  

  • 250 Grms Ginger
  • 250 Grms Garlic
  • Salt to Taste
  • 1 tbsp Oil optional
  • 1 tsp Turmeric Powder optional

Instructions
 

  • Peel the skin of ginger and wash it thoroughly.
  • Peel the skin of garlic.
  • In a blender jar add ginger and garlic.
  • Blend it to make smooth fine paste.
  • Add salt and blend it again.
  • Add oil and turmeric powder for longer shelf life.
  • Adding oil and turmeric is purely optional though.
  • I sometimes do not add even salt.
  • Store it in an airtight container.
  • Use ginger garlic paste in curries, dal, biryanis, and any special rice.
