Paneer Bhurji is a North Indian dish made from paneer, tomatoes and onions. Paneer is Indian cottage cheese prepared from milk.

About paneer bhurji:

Paneer bhurji is scrambled paneer. Paneer is Indian cottage cheese, and bhurji means scrambled. It is an alternative to Egg bhurji for vegetarians. Bhurji is the best and simplest way to use paneer as a side dish for roti or chapati. We can also enjoy it as an evening snack.

The leftover paneer bhurji can be used as a filling for paratha or sandwiches. Paneer can be used in a variety of dishes such as paneer butter masala, paneer paratha, paneer fried rice and the list goes on.

We can use store-bought paneer to make any paneer recipes. But I always prefer to prepare paneer at home only. Making paneer at home is also easy, simply boil milk and add lemon juice to it curdle. Strain the curdled milk in a colander. Cover and put heavy objects to squeeze excess water from it. Let it rest for half an hour and use paneer as you wish. Ingredients
  

  • 200 grms Paneer
  • 1 cup Onion chopped
  • 1 cup Tomato chopped
  • 1 Green chilli chopped
  • 1 tsp Ginger Garlic Paste
  • 1 tbsp Oil
  • 1/2 tsp Cumin Seeds
  • Salt to Taste
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • 1 tbsp Lemon Juice
  • 1 tbsp freshly chopped coriander

Instructions
 

  • Chop onion and tomato. Chop them bite size pieces
  • Chop green chillis also.
  • Heat oil in a kadai.
  • Add cumin seeds and let them splutter.
  • Add chopped onions and fry them till they turn translucent.
  • Add chopped tomatoes and saute them till they turn mushy.
  • Add salt and turmeric powder.
  • Add ginger garlic paste and cook till raw smell goes off.
  • Add garam masala, coriander powder and combine them well.
  • Add crumbled paneer and mix it well.
  • Mix it well and let it cook for 5 to 8 minutes.
  • Let the moisture present in paneer dry up well.
  • Switch off the flame and add lemon juice.
  • Temper it with freshly chopped coriander.
  • Combine well and serve paneer bhurji immediately with roti or chapatai.

Notes

  • We can use store brought paneer or homemade paneer.
  • I prefer to use freshly made paneer.
  • 1 or 2 days old paneer can also be used.
  • Do not over cook.
