Ugadi pachadi is a special dish made during Ugadi festival.
Ugadi pachadi is a concoction of 6 main tastes. Salt, sweet, tangy/astringent, spicy, bitter, sour
– 1/2 cup Neem Flower – 1/2 cup Tamarind – 1/2 cup jaggery – 1/2 cup Raw Mango (peeled and cut into small pieces) – Salt to Taste – 1 tsp Red Chilli Powder
– Soak tamarind for half an hour. – Pluck neem flowers from the tender stems. – Chop jaggery. – Peel the skin of raw mango and cut into small pieces. – Extract tamarind juice from soaked tamarind. – In a mixing bowl add neem flowers, tamarind juice, salt. – Red chilli powder, jaggery and cut mango pieces too. – Mix all of them well and offer it to the deity. – Serve Ugadi pachadi.
