Potato is an all time favourite vegetable to almost all the kids. Pack potato rice for kids lunch box, which make them happy. They will be on cloud nine on that day for their lunch box. A very easy and simple rice recipe loved by one and all.
Potato Rice
– 1 Cup Rice– 200 grms Potatoes / Aloo– 1 Medium size Onion– Salt to Taste– 1/4 tsp Turmeric Powder– 1 tbsp Red Chilli powder– 1 tbsp Ginger Garlic Paste– 1 tsp Garam Masala– 1 tsp Coriander Powder– 1 tbsp Lemon Juice
Ingredients
– Pressure cook rice in 2:1 ratio with water and rice. for 3 whistles.– Allow it to cool down once the cooker gets cool.– Cut potatoes into byte size pieces and pressure cook them also for 1 or 2 whistles.– Heat oil in a kadai, fry potatoes in batches till they are crisp.
Step 1
– Fry them in batches to avoid turning mushy.– Keep them aside to cool.– Again heat oil in a kadai, add sliced onions and fry them till they turn translucent.– Add ginger garlic paste and fry. – Add salt and turmeric powder, Sauté well.
Step 2
– Add chilli powder, coriander powder and garam masala. Combine them well.– Add fried potatoes and rice. Combine them well and Switch off the flame.– Just before transferring into the serving bowl sprinkle lemon juice and mix it well.– Serve potato rice with plain curd.
