Pulissery is a Kerala recipe mainly made with thick buttermilk or curd with added seasoning.

Pulissery also known as “Mor Curry” or “Mor Kachiyathu” is made in different ways with coconut or without coconut. Today I am posting a recipe without coconut. It is good for health particularly during summer. It keeps the body cool. Pulissery or mor curry can be prepared in 5 minutes.
Just heat oil, add mustard, cumin and fenugreek seeds. Let them splutter and then add onions, ginger, garlic and green chillis. Add salt and turmeric and let the onions soften. Add buttermilk and let it also cook to get the flavours of onion and garlic. Simple!! isn’t it?? Let’s rock it!!
Step by Step Procedure with images

Heat oil in a kadai, add mustard seeds, cumin seeds and fenugreek seeds. Add chopped onion, green chillis, garlic and ginger

Saute them well and add turmeirc powder and salt.

Let the onion cook well.

Add buttermilk or curd.

Allow the buttermilk cook for a minute.

Ingredients:
- 1 cup Buttermilk or curd
- 1 Onion
- 2 green chillis
- 3″ long Ginger
- 5 Garlic
- Salt to Taste
- 1/4 tsp Turmeric Powder
- 1/4 tsp Asafoetida
- 1 tbsp oil/Coconut Oil
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 1/4 tsp Fenugreek Seeds
- 4 to 5 Curry Leaves
- Fistful of Coriander Leaves
Procedure:
- Finely chop onion and green chillis.
- peel the skin and chop ginger and garlic.
- Heat oil in a thick bottom kadai.
- Add mustard seeds, cumin seeds and fenugreek seeds.
- When start spluttering add asafoetida.
- Add curry leaves and coriander leaves.
- Sauté them for a minute.
- Add chopped garlic and ginger.
- Fry them for a minute
- Add chopped onion and green chillis too.
- Let the onions become soft.
- Add buttermilk or curd.
- Keep stirring rapidly on a low flame.
- Do not let the buttermilk boil.
- Switch off the flame.
- While stirring continuously add salt and turmeric powder.
- Do not stop stirring till the heat reduces.
- Transfer the pulissery into a serving bowl to cool.
- Serve pulissery with rice or you can enjoy it as it is also.
- I prefer to serve it with Poha and Sabudana khichdi.
