Peanut sundal recipe for a quick snack. Peanut sundal or palli sundal a quick South Indian snack made with boiled peanuts. Peanut sundal is one variety of healthy snack item prepared during Devi Navratri or Ganesh Navratri.

Peanut sundal recipe made without onion but if you want you can add onions. We make a spice powder specially for this sundal. Peanuts are wholesome, protein rich snacks. they are good for health. They are best source of fiber, healthy fats and provides essential nutrients like Vitamin E, folate and magnesium. The best part of them is they are low carb food.
Boiled peanuts tempered with spices, fresh coconut are very light and nutritious. Serve them anytime of the year. Normally, golu days and ganesh navratri days are the best season to make any sundal recipes. They are filling too.
Ingredients for Peanut Sundal:
Peanuts: The most important ingredients in it is peanuts. We have to soak them for at least 4 to 5 hours for better cooking. Boil them for 4 to 5 whistles, they should retain their shape and also nutty flavour too.
Coconut: Always prefer to use freshly grated coconut to get proper taste and texture.
Salt: do not add salt fully while pressure cooking peanuts. Add it only while tempering them to get exact flavour.
Sundal Powder: We make a special spice powder for sundal with urad dal and chillis. Dry roast them and grind them to coarse powder.
Optional: These are prepared for offering to deity so did not added onions, but if you prefer you can always add finely chopped onions.

About the recipe:
To make peanut sundal we have to prepare well in advance. Soak peanuts for at least 4 to 5 hours. We have pressure cook them for 4 to 5 whistles. Temper them with mustard seeds, cumin seeds and urad and chana dals. Saute boiled peanuts for a while and then add specially made sundal powder, freshly grated coconut and lastly add a spoonful of lemon juice to get that sour flavour. Enjoy peanut sundal with a hot cup of coffee or tea.

Peanut Sundal Recipe for a quick snack | Sundal varieties
Ingredients
- 1 Cup Peanuts
- Salt to Taste
- 2 tbsp freshly grated Coconut
- 2 tbsp Oil
- 1 tsp Mustard seeds
- 1 tsp Cumin Seeds
- 1 tsp Urad Dal
- 1 tsp Chana Dal
- 1 red chilli
- 4 or 5 Curry Leaves
- Fistful of Coriander Leaves
- 1 tbsp Sundal Masala Powder
- 2 Green Chilli
Sundal Masala Powder
- Pinch of Asafoetida
- 2 tbsp Urad Dal
- 3 Red Chillis
Instructions
- Heat a kadai, roast urad dal and red chillis.
- Lastly add a pinch of hing/asafoetida.
- Allow this to cool for a while.
- Grind it to make a coarse powder.
- This powder can be made before hand and keep it avaialable.
- Soak peanuts for 4 to 5 hours.
- Drain excess water and pressure cook for 4 to 5 whistles.
- Strain the boiled peanuts in a colander and let them dry for sometime.
- Heat oil in a kadai, add urad dal and chana dal. Saute them till they turn golden yellow.
- Add mustard seeds and cumin seeds. Allow them to crackle.
- Once the tadka started crackling add boiled peanuts and saute them too.
- Fry them for a while, add asafoetida, salt and turmeric powder.
- Combine them well and add the above made sundal masala powder.
- Mix them well and add freshly grated coconut and once combine them well.
- Add coriander leaves and switch off the flame.
- Lastly add lemon juice and mix again and serve.
- Serve peanut sundal recipe with a hot cup of coffee or tea.
