What is Mango Murabba?
Mango murabba can be made in three different ways, one is cooking raw mangoes pieces in sugar or jaggery syrup. The second method is to mix all of the ingredients and allow it to rest for a day. Then keep it under the sun till we get the desired texture and consistency. The last method I know is to mix sugar and jaggery along with grated mango, cook for a while and add the spices. I found the last method as easy and simple, so I follow it. Mango Murabba is made with raw or semi-ripe mangoes.

I have learned it from my aunt. She taught me with grated mango, but when I was googling for it I found that the mangoes are cut into pieces. But choice is ours, we can grate or cut it into pieces. Add flavourful aromatic spices like cardamom powder, saffron, chilli powder and kaala namak. Include any spices also of our choice, but we should see that not a single spice dominate the other. It has a jam-like consistency but with tender grated mango or pieces that melt in your mouth.

Mango Murabba | How to make Aam Murabba
Ingredients
- 3 cups Raw Mango grated
- 2 cups Sugar
- 1 & 1/2 cup Jaggery
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Kala Namak/Black Salt
- 1/2 tsp Roasted Cumin Powder
Instructions
- Wash and peel the skin of mangoes.
- Grate them using thick grater.
- Chop jaggery.
- In a wide and thick bottom pan, add grated mango, jaggery and sugar.
- Mix all of them well.
- We can add 1 cup of water.
- Cook on a medium flame till it starts boiling.
- Add all the spices, red chilli powder, roasted cumin powder and kala namak.
- Combine them well and let it cook for 5 minutes.
- Cook on low flame only, keep stirring occasionally.
- The consistency should be thick and easy to spread.
- While cooking take a spoon of it slowly drop in a cup of water.
- The right consistency is reached if it does not move.
- Switch off the flame and transfer it to a bowl to cool.
- Once cooled completely store in an air tight and dry glass container.
