Lauki Chana Dal curry
· Lauki or sorakaya is rich in nutrients, fibre rich vegetable. · Fiber present in it aids improving digestion, prevents constipation. · Low calories in the vegetable helps in weight management. · Rich water content present in it keeps hydrated during summers. · Lauki may also help in breaking down kidney stones and treating urinary tract infections.
– 2 Cups Lauki / Sorakaya cut into byte size pieces – 1 Cup Chana Dal/Senaga pappu – 1 Onion – 1 Tomato – Salt to Taste – 1/4 tsp Turmeric Powder – 1 tsp Red Chilli Powder – 1 tsp Coriander Powder – 1 tsp Garam Masala
– 2 tbsp oil – 1 tsp mustard seeds – 1 tsp cumin seeds – 2 red chillis – 1/4 tsp asafoetida/Hing – 4 or 5 curry leaves
– Wash and peel lauki, cut into bite size pieces. – Chop onions and tomatoes. – Soak chana dal for half an hour. – Heat oil in a pressure cooker. – Add ingredients under Tadka. – Saute them well and let the cumin starts spluttering.
– Add chopped onions and tomatoes – let them cook till turn mushy. – Add salt, turmeric powder and saute them. – Add soaked chana dal, lauki pieces. – Add red chilli powder, coriander powder and garam masala.
– Mix them well and add 2 cups of water. – Pressure cook them for 3 to 5 whistles. – Once the pressure cools down cook for another 3 to 5 minutes. – Serve lauki chana dal with rice or roti.
